Description
This Ayurvedic-inspired carrot and apple soup combines sweet carrots, potatoes, celeriac, fresh apple, lemongrass, curry powder, and creamy coconut milk. Ghee adds richness while cayenne brings gentle warmth, creating a smooth and aromatic soup that is comforting and full of flavor.
Ingredients
- 500 g carrots, peeled and chopped
- 100 g floury potatoes, peeled and diced
- 100 g celeriac, peeled and diced
- 2 spring onions, sliced
- 1 apple, such as Boskop, peeled, cored, and chopped
- 1 stalk lemongrass, trimmed and lightly crushed
- 2 tbsp ghee
- 1 tbsp curry powder
- 200 ml coconut milk
- Salt, to taste
- Cayenne pepper, to taste
- Fresh cilantro, for garnish
Instructions
- Peel and chop the carrots, potatoes, and celeriac into evenly sized pieces. Slice the spring onions and chop the apple.
- Trim the lemongrass and lightly crush it with the side of a knife to release its aroma.
- Heat the ghee in a large pot over medium heat. Add the spring onions and sauté for 2–3 minutes until softened.
- Add the carrots, potatoes, celeriac, apple, and curry powder. Stir well and cook for 2–3 minutes.
- Add the lemongrass and pour in enough water to just cover the vegetables. Bring to a boil.
- Reduce the heat, cover, and simmer for about 20–25 minutes, until all the vegetables are very tender.
- Remove the lemongrass. Blend the soup with an immersion blender until completely smooth.
- Stir in the coconut milk and season with salt and cayenne pepper to taste.
- Warm gently for another 2–3 minutes without allowing the soup to boil.
- Ladle into bowls and garnish with fresh cilantro.
- Serve warm.
Notes
- Adjust the cayenne pepper according to your preferred level of heat.
- Use a naturally sweet apple for a balanced flavor, or choose a more tart variety for extra brightness.
- If the soup is too thick, add a little warm water or vegetable broth.
- For a vegan version, replace the ghee with coconut oil or another plant-based cooking oil.
